Recipe: Low-Fat Mexican Flan

Mexican FlanI’m really lovin’ this Mexican food! I tried to make flan for the first time a couple Saturdays ago and it came out tasting delicious! There’s a bunch of different variations of flan recipes out there, but using my best judgment, I think the following ingredients make for a great-tasting, and low-fat-as possible flan dessert.

Ingredients:
2 whole eggs
4 egg whites
1 can (300mL) low-fat sweetened condensed milk
1 can (370mL) fat-free evaporated milk
1 cup sugar
1 tsp cinnamon
1 tsp vanilla extract

Equipment:
1 8-inch round glass/silicone dish
1 roasting pan (large enough for the 8-inch dish to fit in)

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Pour sugar into a heavy saucepan over medium-high heat. Stir constantly to prevent burning until the sugar is liquefied and golden in colour. Quickly pour the caramelized sugar into the glass dish, swirling around the sides to coat the surface evenly. Set aside.
  3. In a large bowl, beat egg whites and egg yolks. Beat in the condensed milk, evaporated milk, vanilla and cinnamon until smooth. Pour egg mixture into the caramel-lined glass baking dish.
  4. Place the baking dish in the roasting pan. Fill the roasting pan with boiling water (enough to cover halfway up the sides of the glass dish). Bake for about 1 hour until the centre is just set. Cool for an hour on a wire rack, then chill in the fridge for several hours or overnight.
  5. Run a knife around the edge of the glass dish and invert the flan onto a serving platter to unmold.

Sun-Rype Fruit Source Plus Veggie Bar - sunrype.comOne of the things that I love about visiting the National Women’s Show is learning about new products (and of course freebies :D ). One of these freebies that I got a couple weeks ago was a 15-pack of Sun-Rype Fruit Source Bars. There was a choice of strawberry or wildberry “plus veggie” flavours, so I opted to try the one with the veggies. I didn’t recall tasting these particular bars before (I usually buy the smaller Fruit-To-Go snack bars), but I’m glad that I did, because they are super-tasty!

Made with 100% fruit and vegetables, these bars contain fibre, potassium, Vitamin A and 3 servings of fruit and veggies in each one. I could hardly taste the carrots that are part of the ingredients, so the bar has a nice, naturally sweet taste. No artificial colours either, and it’s only 130 calories with no fat–perfect for that mid-morning snack. Chewy (but not sticky), these Fruit Source bars should be a staple in your kitchen when you want a healthy snack alternative

Recipe: French Toast (No Syrup Needed)

One of my favourite breakfast foods to make is French Toast. This is the way I always used to make it: with sugar in the egg mixture so I don’t have to worry about pouring syrup over the toast after it’s none (after all, if I wanted to do that, I’d just make pancakes!). I like to use Villaggio Italian Style White Bread or Dempster’s Thick Slice White Bread. Taste great served with a side of beans (fiber!) and bacon.

Prep Time: 5 minutesFrench Toast

Cook Time: 20 minutes

Yield: 6 slices

Ingredients:

6 slices of bread
4 eggs
2 tablespoons milk
1/4 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
2 tablespoons butter or margarine

Directions:

  1. In a medium mixing bowl, beat the eggs. Add the milk, vanilla, cinnamon, nutmeg and gradually add the sugar until blended.
  2. Over medium heat, melt 1 tablespoon of butter or margarine in a frying pan.
  3. Soak the sliced bread in the egg mixture until both sides are coated.
  4. Place the saturated slices of bread onto the frying pan, cooking for 4-5 minutes on each side, until golden-brown.
  5. Serve immediately and enjoy!

I Love Greek Food

I think Krinos Taste of the Danforth is going to be one of my ‘must-attend’ events every summer. Last night was my first time there, and I didn’t realize there would be so many people craving everything Greek at 9 o’clock in the evening!

The Danforth was PACKED. I should’ve worn my runners because I got my toes stepped on a couple times, and nearly slipped on a watermelon peel with my sandals. The food was absolutely delicious. I had a chicken gyro, some pork shiskabob, stuffed vine-leaves and some super-sweet loukoumades (honey balls) for dessert. I’m tempted to reach down there again today, but I have a family BBQ to attend.

I’m sorry that I didn’t take any photos to post, but my hands were kind of full with food. :D

Hot & Spicy Food Festival

Hot and Spicy Food Festival - image from harbourfrontcentre.comDo you like it hot? Spicy? If yes, then you’re in for a treat this weekend at Harbourfront Centre. This week the Centre will host the Hot & Spicy Food Festival as part of it’s World Routes series of free events.

You can watch Mexican Chef Sergio Remolina Sanchez cook up a spicy meal, purchase some bottled hot pepper sauce and spices at the “Red Hot Market” or watch a demo on Indian cooking. What I’m really looking forwad to though is the 4th Annual Hot and Spicy Iron Chef Competition finals! I love spicy food, so this is an event that I can’t miss. Be sure to check out the schedule of events.

I’m seriously going to have to bring some tupperware with me this weekend.
